How To Make A Rustic Green Chicken Curry

This is a Mexican and Indian fusion recipe. I used the best of both cultures to create this dish, and it is delicious! To begin, cut up a whole chicken into small to medium pieces. Mix all the powdered spices together and use them as a marinade for the chicken. All this mixture to marinate for at least 30 minutes. Then dry roast all the seed and wooded spices. This will ensure that the spices release most of their aroma. I roasted the peppers, peeled them, and deveined them before to ensure a more authentic flavor to this dish. Use a high-powered blender to blend your peppers, garlic, ginger, coriander, and toasted spices. Add your stock or water and blend until smooth. In a big pot, add about 1/4 cup of oil. Use high heat to sear the chicken. Add the onion paste to the mixture and continue to stir. Next, add the green mixture to the chicken. 1 whole chicken
1 cup of salsa verde
1 cup of onion paste
1 poblano chili
1 Anaheim chili
1/4 cup coriander
2 tbsp ginger
4 tbsp garlic
1 tbsp cumin seed
1 tbsp coriander seed
1 tbsp peppercorn
1 tsp Mexican oregano
1 anise seed
6 cardamom seeds
10 cloves
1 cinnamon stick

Chicken Marinade -
1 tsp turmeric
1 tsp coriander powder
1 tsp chili powder
