This was my least favorite soup growing up but now, it’s become a comfort meal.

Oh how I took these meals for granted🥹

MAKING PORK BROTH
3.5 liters of water
2 lbs pork ribs
1 onion

THE SOUP ITSELF
1 tsp salt
2 tsp chicken bouillon
2-3 tsp sugar
8 oz mushrooms of choice, cut into quarters
1 opo squash, julienned/ cut into strips (watch videos to see how its cut. DISCARD THE MIDDLE PART which is the seed)
Chopped scallion
Chopped cilantro
Black pepper to taste

1. FIRST make your soup base. Make pork broth however your want. You can use can pre-made broth or bouillon cubes but this is just how I make it (you can also use chicken broth)
- Bring 3.5 liters of water to boil.Then add your onions and pork ribs. Bring it back to a boil and then reduce your heat to simmer. Simmer for 30 minutes.
- During this 30 mins, don’t forget to skim out any impurities that float to the top.
- Once your done with your pork broth, remove the onions and discard. Remove your pork bones and reserve. Pour your broth through a strainer and discard anything that didn’t make it through the strainer. We want strictly broth. No rinkydinky small bone fragments/ impurities in the broth.

2. Pour your pork bone back into a clean pot and season to preference. My mom seasoned with 1 tsp salt, 2 tsp chicken bouillon, and 2-3 tsp sugar.

3. Then add your pork ribs back into the broth along with your mushrooms. Bring this to a boil.

4. Once your soup is boiling, add your opo squash. Depending on how you cut it and the thickness, this cooks very fast. Cook for 2-3 minutes. Turn off heat and then top with chopped scallion, cilantro and black pepper.
